Super easy to make and really really tasty!
Ingredients:
•1 block tofu
•1 lemon juice
•2-3 cloves of garlic 
•small bunch of fresh parsley 
•1 tsp dried herbs
•pinch of salt
•some olive oil to garnish 
Directions:
Blend all the ingredients in a food processor, top it with some olive oil and let sit in a fridge for 1 hour. Spread in you sandwiches, or enjoy just on toast! Minty & Garlicky Sweet peas over Clasic Hummus Thi Minty & Garlicky Sweet peas over Clasic Hummus
This is one of the best combinations ever! Super healthy and delicous!
For Minty Peas:
Ingredients:
•500g frozen sweet peas
•3 cloves garlic
•150 ml olive oil
•bunch of fresh mint
•2 tsp dried mint
•1 lime juice
•2 tsp chili flakes
•1 tsp salt
•fresh mint for garnish 
Directions:
First make garlic oil by blending garlic and olive oil with a hand blender. Set ot aside. Boil about 4 cups of water and add peas. It’s very important to put in boiling water as we don’t want overcooked peas. Boil peas for 4 minutes and drain with a really cold water. This way we stop cooking peas immediately. 
In a large bowl add peas, garlic infused olive oil and all the remaining ingredients. Top it it with fresh lime juice and fresh mint. Serve this mixture over classic hummus and it’s the best thing ever!

Beetroot Falafels & Parsley Tahini sauce I love be Beetroot Falafels & Parsley Tahini sauce
I love beetroot taste and colour so much so I have to add it in so many of my foods! 
This time I made beetroot falafels with homemade green tahini sauce! It was really amazing! 
Anyone else loves beetroot?  Ingredients 
Falafels:
•2 cans of chickpeas 
•2-3 medium beetroot, cooked 
•1 large onion
•3 cloves of garlic
•bunch offresh parsley 
•1 tsp ground cumin
•1 tsp salt
•1/2 tsp baking powder
•1/2 tsp chilli flakes
•3-4 tbsp flour (any gluten free flour works)
•olive oil for cooking
For sauce:
•3 tbsp tahini
•1 garlic clove 
•1/2 lemon juice
•1/2 cup of parsley 
Directions:
For the falafels add all the ingredients into a food processor and blend until combined. Form little balls and bake in the oven with a drizzle of olive until golden. Meanwhile blend all the sauce ingredients add splash of water if needed for a runny consistency. Serve baked falafels with sauce and enjoy! Lentil ‘mince’ Börek Börek is one of my favo Lentil ‘mince’ Börek
Börek is one of my favourite and fast meal ideas. You can experiment so much with the filling and it always surprises with the flavour. Today we made börek with vegan mince made from lentils and it was soo delicious! Definitely give it a try!
Ingredients:
•4 sheets of phyllo or yufka sheets 
•1/2 cup vegetable oil
•3 tablespoons flour
•3 tbsp plant milk
Filling:
•300g cooked lentils
•1 onion
•1bell pepper 
•1/2 tsp tomato or pepper paste
•4 tablespoon olive oil
•2 teaspoons paprika
•handful minced parsley and dill
•Salt
Directions:
Finely chop the onion and bell pepper and sauté until translucent. Add in the tomato paste and stir for 2 mins. Stir in the paprika. Add in lentils, parsley and salt, then stir well, mash half of the mixture with a fork, mix everything and remove from heat. Place one phyllo sheet on the clean kitchen counter,
Whisk together 1/2 cup of oil and 3 tablespoons of flour until frothy.
Brush 1/4 of the oil mixture onto the phyllo sheet. Place a second sheet on top,
Brush this with same amount of oil mixture. Cut this into 8 squares. Place some of the lentil filling onto the philo sheets. Then close from the sides and fold. Prepare the other two phyllo sheets the same way. Brush the top with plant milk.
Bake at 200 degrees celsius preheated oven until golden brown.

Parsley & Lemon Hummus Let me share my new favour Parsley & Lemon Hummus 
Let me share my new favourite hummus flavour which is really next level. I always love to top my humus with parsley and lemon, so I thought why not to add more in to the hummus! Oh woow! It was amazing!  Ingredients:
•1 1/2 cups softly cooked chickpeas
•5 tbsp tahini
•1 1/2 lemon juice
•1/2 tsp each salt and cumin (adjust salt if needed in the end)
•1/2 cup of chopped parsley 
•2 cloves of garlic 
•olive oil for topping
•chili pepper  garnish
Directions:
Add all the ingredients except olive oil and chili pepper in to a food processor and blend until very smooth. Add splash of cold water if to thick. Transfer to a bowl and top it with olive oil and chili pepper! Pumpkin Chickpea Salad I created more healthier an Pumpkin Chickpea Salad
I created more healthier and autumn inspired chickpea salad using pumpkin as a dressing and it was soo good, that no need for mayo or oil…😍  Ingredients for the chickpea salad:
• 1 tin of chickpeas, mashed
•1/2 onion, diced
•1 small carrot, shredded 
•2 cloves garlic, minced 
•300g of roasted pumpkin
•handful of dill
•2-3 tbsp tahini
•1/2 lemon juice
•salt and pepper to taste 
Directions:
In a bowl add mashed chickpeas, onion, carrot, garlic and mix well. In a food processor blend pumpkin, tahini, lemon juice and spices. Transfer the sauce to the chickpea mixture, add chopped dill, and mix well. I would let this mixture sit in a fridge for 20 minutes to combine the flavours, but you can serve it straight. 
Serve on toast, or make a loaded sandwich like I did, toasted bread, chickpea salad, tomato, lettuce and pumpkin slices. It was really really amazing!

Lentil ‘mince’ Börek Börek is one of my favo Lentil ‘mince’ Börek
Börek is one of my favourite and fast meal ideas. You can experiment so much with the filling and it always surprises with the flavour. Today we made börek with vegan mince made from lentils and it was soo delicious! Definitely give it a try!
Ingredients:
•4 sheets of phyllo or yufka sheets 
•1/2 cup vegetable oil
•3 tablespoons flour
•3 tbsp plant milk
Filling:
•300g cooked lentils
•1 onion
•1bell pepper 
•1/2 tsp tomato or pepper paste
•4 tablespoon olive oil
•2 teaspoons paprika
•handful minced parsley and dill
•Salt
Directions:
Finely chop the onion and bell pepper and sauté until translucent. Add in the tomato paste and stir for 2 mins. Stir in the paprika. Add in lentils, parsley and salt, then stir well, mash half of the mixture with a fork, mix everything and remove from heat. Place one phyllo sheet on the clean kitchen counter,
Whisk together 1/2 cup of oil and 3 tablespoons of flour until frothy.
Brush 1/4 of the oil mixture onto the phyllo sheet. Place a second sheet on top,
Brush this with same amount of oil mixture. Cut this into 8 squares. Place some of the lentil filling onto the philo sheets. Then close from the sides and fold. Prepare the other two phyllo sheets the same way. Brush the top with plant milk.
Bake at 200 degrees celsius preheated oven until golden brown.

Let me share my new favourite hummus flavour which is really next level. I always love to top my humus with parsley and lemon, so I thought why not to add more in to the hummus! Oh woow! It was amazing!  Ingredients:
•1 1/2 cups softly cooked chickpeas
•5 tbsp tahini
•1 1/2 lemon juice
•1/2 tsp each salt and cumin (adjust salt if needed in the end)
•1/2 cup of chopped parsley 
•2 cloves of garlic 
•olive oil for topping
•chili pepper  garnish
Directions:
Add all the ingredients except olive oil and chili pepper in to a food processor and blend until very smooth. Add splash of cold water if to thick. Transfer to a bowl and top it with olive oil and chili pepper! Pumpkin Chickpea Salad I created more healthier an Pumpkin Chickpea Salad
I created more healthier and autumn inspired chickpea salad using pumpkin as a dressing and it was soo good, that no need for mayo or oil…😍  Ingredients for the chickpea salad:
• 1 tin of chickpeas, mashed
•1/2 onion, diced
•1 small carrot, shredded 
•2 cloves garlic, minced 
•300g of roasted pumpkin
•handful of dill
•2-3 tbsp tahini
•1/2 lemon juice
•salt and pepper to taste 
Directions:
In a bowl add mashed chickpeas, onion, carrot, garlic and mix well. In a food processor blend pumpkin, tahini, lemon juice and spices. Transfer the sauce to the chickpea mixture, add chopped dill, and mix well. I would let this mixture sit in a fridge for 20 minutes to combine the flavours, but you can serve it straight. 
Serve on toast, or make a loaded sandwich like I did, toasted bread, chickpea salad, tomato, lettuce and pumpkin slices. It was really really amazing!
