Roasted Pear and Fennel

This roasted pear and fennel salad is really what you need for the best roasted vegetable salad.

- 3 medium fennel
- 3 sweet pears
- 1 tbsp agave syrup
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp za'atar
Dressing
- ½ cup chopped parsley
- 2 tbsp olive oil
- ½ lemon juice
Cut the fennel greens and slice the fennel in wedges. Add to a baking dish.
Slice the pears in half or in quarters. Add to a baking dish.
Add olive oil, salt, agave and za'atar to the vegetables and bake in the preheated 200°C oven for about 35 minutes.
Mean while mix parsley, lemon and olive oil in the dressing.
Add the dressing on the cooked fennel and pears and enjoy!
