Marinated Roasted Red Peppers

These Marinated Roasted Red Peppers are such a perfect staple which everyone should have in their house. Use it on everything: sandwiches, wraps, side dish etc.

- 4-5 large bell peppers
- 3 tbsp olive oil
- 1 tsp salt
- 3 cloves garlic
- 1 handful fresh parsley
- ½ lemon juice
Cut peppers in half and remove all the seeds inside.
Drizzle with 1 tbsp olive oil and add salt. Rub in oil mixture very well that the peppers get coated well.
Add to a baking dish skin side up and cook in the preheated hotest oven possible (min one was 280°C).
Check when the skins turned black it means it's ready to take out of the oven.
Remove skins carefully while the peppers are still hot and slice them in to strips.
Add minced garlic, parsley, lemon juice and olive oil and mix well.
Also don't forget to add the cooking juices as it has lots of flavour.
Marinate these peppers for at least 2-3 hours before serving. Enjoy!
