Parsley Pesto Roasted Potato Salad

This Parsley Pesto Roasted Potato salad is seriously delicious way to make potatoes and have amazing side dish.

  • 3 cloves garlic
  • 1 cup chopped parsley
  • 4 tbsp olive oil
  • 1 tbsp water
  • ½ lemon juice
  • ½ tsp salt


  • 1 kg potatoes, peeled
  • 2 tbsp olive oil
  • 1 tsp salt and black pepper


  • Peel and cut potatoes in to cubes. Season with salt and pepper and drizzle with olive oil.
  • Bake potatoes in prheated 200°C oven for about 35-40 minutes until golden brown and crispy.
  • Meanwhile make pesto sauce by adding all the pesto ingredients to a food processor.
  • Blend until smooth consistency.
  • When potatoes are cooked let it cool for couple minutes and mix with pesto sauce. Enjoy!
