Parsley Pesto Roasted Potato Salad

This Parsley Pesto Roasted Potato salad is seriously delicious way to make potatoes and have amazing side dish.

Pesto
- 3 cloves garlic
- 1 cup chopped parsley
- 4 tbsp olive oil
- 1 tbsp water
- ½ lemon juice
- ½ tsp salt
Potatoes
- 1 kg potatoes, peeled
- 2 tbsp olive oil
- 1 tsp salt and black pepper
Peel and cut potatoes in to cubes. Season with salt and pepper and drizzle with olive oil.
Bake potatoes in prheated 200°C oven for about 35-40 minutes until golden brown and crispy.
Meanwhile make pesto sauce by adding all the pesto ingredients to a food processor.
Blend until smooth consistency.
When potatoes are cooked let it cool for couple minutes and mix with pesto sauce. Enjoy!
