Pesto Cauliflower Salad
Super delicious and easy cauliflower salad
- 1/2 cup basil
- 1/2 cup parsley
- 1/2 cup green olives pitted
- 1/4 tsp salt
- 2 cloves garlic
- 1/4 cup walnuts
- 4 tbsp olive oil extra virgin
- 1/2 lemon juice
- water for the consistency
Cut cauliflower into florets.
Put cauliflower in a boiling water and cook for about 10 minutes, or until tender.
Add all the pesto ingredients in to food processor and blend until creamy consistency.
Mix it with boiled cauliflower florets, parsley and pomegranate seeds.
