Roasted Sqush with Garlic Scape Sauce

This roasted squash with garlic scape sauce is all about keeping things simple, natural, but yet very delicious.

  • 1 small squash
  • 2 tbsp olive oil
  • 1 tbsp za'atar
  • 1 tsp salt

Garlic scape sauce

  • bunch garlic scapes
  • 1 tbsp tahini
  • ½ lemon juice
  • 2 tbsp olive oil
  • cup pumpkin seeds
  • ½ tsp salt


  • Peel and chop the squash into small cubes.
  • Drizzle with olive oil, salt and za'atar and bake in the preheated 200C oven for about 30 minutes or until golden bron and for tender.
  • Meanwhile add all the sauce ingredients to a food processon and blen until you get smooth consistency. Add a splash of water if needed.
  • Serve the cooked squash over the sauce nad enjoy!
