Potato Wedges with Pesto Mayonnaise
These potato wedges and pesto mayonnaise is a perfect crispy appetizer or a snack for any lunch or dinner. Together with this sauce it's so flavourful and delicious. Everyone is going to love it!
- 1,5 kg large potatoes
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp italian herbs
- 2 tbsp vegan mayonnaise
- 2 tbsp pesto of choice
Peel and cut each potato into 6-8 wedges.
Toss potatoes in olive oil and spices and mix well.
Bake in the preheated oven for about 35-40 minutes until crispy on the outside.
