Potato Wedges with Pesto Mayonnaise

These potato wedges and pesto mayonnaise is a perfect crispy appetizer or a snack for any lunch or dinner. Together with this sauce it's so flavourful and delicious. Everyone is going to love it!

Ingredients
  

Potato wedges

  • 1,5 kg large potatoes
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp italian herbs

Pesto mayonnaise

  • 2 tbsp vegan mayonnaise
  • 2 tbsp pesto of choice

Instructions
 

Potato wedges

  • Peel and cut each potato into 6-8 wedges.
  • Toss potatoes in olive oil and spices and mix well.
  • Bake in the preheated oven for about 35-40 minutes until crispy on the outside.

Pesto mayonnaise

  • Mix equal parts of vegan mayonnaise and pesto sauce.
  • Dip your potato wedges and enjoy!
