Ingredients
  

  • 400 g noodles of choice

Sauce

  • 2 tbsp creamy peanut butter
  • 1 tbsp soy sauce
  • 1 tsp maple syrup
  • 2 cloves garlic minced
  • 1 tbsp lemon or lime juice
  • 1 tbsp sesame oil
  • ½ tsp chili flakes optional

Toppings

  • sliced cucumber
  • sesame seeds
  • chopped green onion
  • crushed toasted peanuts

Instructions
 

  • Cook Noodles: If not already cooked, cook noodles according to package instructions. Drain and set aside.
  • In a bowl, whisk together peanut butter, soy sauce, sesame oil, lemon juice, maple syrup, garlic and chili. Add warm water a little at a time until the sauce reaches your desired consistency.
  • Toss the noodles in the peanut sauce until well-coated.
  • Garnish with your choice of toppings, like green onions, sesame seeds, or chili flakes and fresh cucumber.
