- 2 tbsp creamy peanut butter
- 1 tbsp soy sauce
- 1 tsp maple syrup
- 2 cloves garlic minced
- 1 tbsp lemon or lime juice
- 1 tbsp sesame oil
- ½ tsp chili flakes optional
Toppings
- sliced cucumber
- sesame seeds
- chopped green onion
- crushed toasted peanuts
Cook Noodles: If not already cooked, cook noodles according to package instructions. Drain and set aside.
In a bowl, whisk together peanut butter, soy sauce, sesame oil, lemon juice, maple syrup, garlic and chili. Add warm water a little at a time until the sauce reaches your desired consistency.
Toss the noodles in the peanut sauce until well-coated.
Garnish with your choice of toppings, like green onions, sesame seeds, or chili flakes and fresh cucumber.
