Basil hummus
- ½ cup fresh basil
- ¼ cup toasted pine nuts
- 2 cloves garlic
- 3 tbsp olive oil
- 1 can chickpeas
- ½ of one lemon juice
- ½ tsp cumin
- salt to taste
- 2 tbsp tahini
- 4 ice cubes
Fried tomatoes
- 1 cup cherry tomatoes
- 1 tbsp olive oil
- 2 tbsp balsamic vinegar
- salt to taste
Basil hummus
In a food processor, combine basil, pine nuts, garlic and olive oil. Blend until there is no large chunks.
Add chickpeas, tahini, lemon juice, ice cubes, and spices and blend until smooth and creamy. If needed add cold water or more ice cubes for desired consitency.
Taste the hummus and adjust the salt, lemon juice, or garlic according to your preferences.
Fried tomatoes
Heat olive oil in a skillet over medium heat.
Add the cherry tomatoes to the pan, stirring occasionally. Let them blister and soften, about 5-7 minutes.
Sprinkle the tomatoes with salt, pepper, and balsamic vinegar for a hint of acidity and sweetness. Smash half of the cherry tomatoes and continue cooking. Cook for another minute before removing from heat.
Putting all together
Spread the basil hummus in a bowl or serving dish, and top it with the fried cherry tomatoes.
Drizzle with extra olive oil and garnish with a few extra basil leaves for a touch of color.
