Beetroot Bean Burgers

Beetroot Bean burgers are bursting with earthy beets, hearty beans, and a mix of spices, the are delicious but also incredibly easy to make.

Burger Patty
- 1 can red kidney beans
- 1 small beetroot
- 1 large onion
- 1 jelapeno
- ½ cup breadcrumbs
- ⅓ cup choped parsley
- 1 tbsp olive oil
- ½ tsp each smoked paprika, paprika, mixed herbs, salt and black pepper
Sauce
- 2 tbsp tahini
- ½ lemon juice
- ⅓ tsp salt
- 1 clove garlic
- 1 ½ tbsp water
Other
- 4 burger buns
- 1 large tomato
- ½ cup arugula
Start by frying chopped onion, grated raw beetroot and chopped jelapeno pepper with a little bit of salt. Fry for about 5 minutes until soft.
In a large bowl add a can of beans and mash them. You can leave bigger pieces for a better texture.
Add fried onion and beetroot to mashed beans. Add breadcrumbs, olive oil and all the remaining spices and mix well with your hands.
Roughly devide the mixture to 4 pieces and form patties with your hands.
Fry the patties in a vegetable oil, or oven bake them until golden brown.
Meanwhile mix all the sauce ingredients in a small bowl.
Serve the burgers on buns with your fasvorite topping like lettuce, tomato and delicious tahini sauce..
