Beetroot Bean Burgers

Beetroot Bean burgers are bursting with earthy beets, hearty beans, and a mix of spices, the are delicious but also incredibly easy to make.

Ingredients
  

Burger Patty

  • 1 can red kidney beans
  • 1 small beetroot
  • 1 large onion
  • 1 jelapeno
  • ½ cup breadcrumbs
  • cup choped parsley
  • 1 tbsp olive oil
  • ½ tsp each smoked paprika, paprika, mixed herbs, salt and black pepper

Sauce

  • 2 tbsp tahini
  • ½ lemon juice
  • tsp salt
  • 1 clove garlic
  • 1 ½ tbsp water

Other

  • 4 burger buns
  • 1 large tomato
  • ½ cup arugula

Instructions
 

  • Start by frying chopped onion, grated raw beetroot and chopped jelapeno pepper with a little bit of salt. Fry for about 5 minutes until soft.
  • In a large bowl add a can of beans and mash them. You can leave bigger pieces for a better texture.
  • Add fried onion and beetroot to mashed beans. Add breadcrumbs, olive oil and all the remaining spices and mix well with your hands.
  • Roughly devide the mixture to 4 pieces and form patties with your hands.
  • Fry the patties in a vegetable oil, or oven bake them until golden brown.
  • Meanwhile mix all the sauce ingredients in a small bowl.
  • Serve the burgers on buns with your fasvorite topping like lettuce, tomato and delicious tahini sauce..
