Berry Cordial

Homemade berry cordial is not only delicious, easy to make, but also free from the artificial flavors and preservatives found in many store-bought versions.

- 500 g fresh seasonal berries I used strawberries and black currants
- 1 handful fresh mint leaves
- 2 slices of lemon per jar/bottle
- 1 l water
- 150 g sugar
- 1/2 of one lemon juice
Sterilise your jars and lids by boiling them in hot water or putting in the 100C oven for 10 minutes.
Wash and clean your berries.
Fill the jars with 3/4 of the berry mixture.
Add 3-4 mint leaves and 2 slices of lemon to each jar.
Syrup
In a pot add water, sugar and lemon juice.
Mix well and bring it to boil until the sugar is melted completely.
Pour the syrup over the berries and close the jars immediatelly.
Turn the jars upside down so the vacuum seal is formed.
Let it cool down completely and keep it refridgerated for 4-5 months. Enjoy!
