Ingredients
  

  • 1 can black-eyed peas
  • ½ small red cabbage shredded
  • 2 small cucumbers thinly sliced
  • 1 handful fresh parsley chopped
  • 1 handful fresh spring onion chopped
  • cup pumpkin seeds toasted

Dressing

  • 2 tsp dijon mustard
  • 2 tbsp olive oil
  • 1 lemon juice
  • 1 tbsp maple syrup or agave
  • 1 tbsp sumac
  • salt to taste

Instructions
 

  • In a salad bowl combine dijon mustard, olive oil, lemon juice, maple syrup, salt and sumac. This dressing adds a zesty punch to the salad and enhances the flavors of the fresh vegetables.
  • To the bowl add shredded cabbage, black-eyed peas, cucumber, herbs and pumpkin seed.
  • Toss everything together until well combined. Let the salad sit for about 10-15 minutes before serving so the flavors meld together beautifully. Enjoy!
