A fresh, crunchy carrot and spinach salad tossed in a zesty lemon and sesame dressing. This quick and healthy recipe is naturally vegan, full of flavor, and perfect as a light lunch or vibrant side dish.

Ingredients
  

For the salad:

  • 2 handfuls of fresh spinach
  • 2-3 large carrots julienned
  • 1 bunch of spring onions chopped
  • 2 cloves garlic minced
  • 2 tbsp sesame seeds toasted

For the dressing:

  • Juice of ½ lemon
  • 1 tbsp sesame oil
  • 1 tsp maple syrup
  • Pinch of salt

Instructions
 

  • Wash and dry the spinach, then place it in a large bowl.
  • Julienne the carrots and chop the spring onions. Add them to the bowl along with the minced garlic.
  • Toast the sesame seeds in a dry pan over medium heat for 2–3 minutes until golden and fragrant. Set aside.
  • In a small bowl, whisk together the lemon juice, sesame oil, maple syrup, and salt.
  • Pour the dressing over the salad and toss gently to combine.
  • Sprinkle the toasted sesame seeds on top and serve immediately.
