For the salad:
- 2 handfuls of fresh spinach
- 2-3 large carrots julienned
- 1 bunch of spring onions chopped
- 2 cloves garlic minced
- 2 tbsp sesame seeds toasted
For the dressing:
- Juice of ½ lemon
- 1 tbsp sesame oil
- 1 tsp maple syrup
- Pinch of salt
Wash and dry the spinach, then place it in a large bowl.
Julienne the carrots and chop the spring onions. Add them to the bowl along with the minced garlic.
Toast the sesame seeds in a dry pan over medium heat for 2–3 minutes until golden and fragrant. Set aside.
In a small bowl, whisk together the lemon juice, sesame oil, maple syrup, and salt.
Pour the dressing over the salad and toss gently to combine.
Sprinkle the toasted sesame seeds on top and serve immediately.
