- 6 small cucumbers finely diced
- 1 red onion finely diced
- ⅓ cup fresh parsley or coriander chopped
- 2 fresh chilies minced
- 1 tbsp olive oil
- ½ tsp maple syrup
- juice of 1 lemon
- salt to taste
Dice cucumbers and red onion into small cubes and place in a bowl.
Add chopped herbs and minced chilies.
Add olive oil, lemon juice, maple syrup, and salt. Mix gently.
Let sit 10–15 minutes to develop flavor.
