Ingredients
  

  • 6 small cucumbers finely diced
  • 1 red onion finely diced
  • cup fresh parsley or coriander chopped
  • 2 fresh chilies minced
  • 1 tbsp olive oil
  • ½ tsp maple syrup
  • juice of 1 lemon
  • salt to taste

Instructions
 

  • Dice cucumbers and red onion into small cubes and place in a bowl.
  • Add chopped herbs and minced chilies.
  • Add olive oil, lemon juice, maple syrup, and salt. Mix gently.
  • Let sit 10–15 minutes to develop flavor.
  • Serve fresh as a dip or topping.
