Ingredients
  

  • ½ block firm tofu
  • 1 tsp vegan mayonaise
  • ½ tsp mustard
  • 1 pickle chopped
  • handful fressh dill
  • handful fresh parsley
  • ½ tsp salt
  • ½ tsp garlic granules
  • 1 tsp curry powder
  • ½ lemon juice

Instructions
 

  • Mash tofu in a bowl.
  • Add all the rest of the ingredients and mix well.
  • Spread on toasted bread, add tomato slices and spinach.
