Green Peas with Olive Oil and Herbs

A light, refreshing side dish made with green peas gently simmered in olive oil with onion, garlic, lemon, and finished with fresh dill and mint. Simple, healthy, and perfect served cool as part of a summer meal or mezze platter.

- 4 tbsp olive oil
- 1 small white onion finelly chopped
- 1 ½ cup green peas fresh or frozen
- 2 spring onions roughly chopped
- 4 cloves garlic roughly chopped
- juice of ½ lemon
- 3 lemon slices
- ¼ cup water
- ½ tsp salt adjust to taste
- ¼ cup fresh chopped dill
- ¼ cup fresh chopped mint
In a medium pan, heat the olive oil over medium heat. Add the white onion and cook until soft and translucent, about 4–5 minutes.
Stir in the peas and salt. Cook for 1–2 minutes, stirring gently.
Add garlic, spring onions, lemon juice, and lemon slices. Stir to combine. Pour in the water, cover with a lid, and let cook on low heat for 15 minutes, or until the peas are tender and changed color.
Remove from heat and stir in chopped dill and mint. Let sit a few minutes to blend flavors.
Serve cooled or at room temperature with an extra drizzle of olive oil.
