Ingredients
  

  • 1 cup mixed olives (green, black, kalamata)
  • 1 lemon zest and juice
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tbsp balsamic vinegar
  • 1 tbsp chopped fresh parsley
  • 1 tsp dried oregano
  • ½ tsp chili flakes
  • ¼ tsp salt

Instructions
 

  • If your olives are very salty, rinse them briefly under cold water and pat them dry. Add to a small bowl.
  • Combine the lemon zest, lemon juice, maple syrup, balsamic vinegar, garlic, olive oil, parsley,oregano, red pepper flakes (if using) and a pinch of salt.
  • Mix the olives with the marinade evenly. Transfer the olives and marinade to a jar or airtight container. Let them marinate for at least 1-2 hours at room temperature, or preferably overnight in the refrigerator.
  • Allow the olives to come to room temperature before serving. Garnish with a bit of extra lemon zest or fresh herbs if desired.
