- 500 g 1.1 lb starchy pumpkin, cut into sticks
- 1 tbsp olive oil
- ½ tsp salt pepper, and paprika each
- 1 cup cooked black beans
- ½ avocado sliced
- ½ red onion thinly sliced
- Fresh parsley chopped
Tahini Sauce:
- 2 tbsp tahini
- 2 cloves garlic minced
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- ¼ tsp salt
- Water to thin
Preheat oven to 200°C (400°F).
Toss pumpkin with oil, salt, pepper, and paprika. Roast 25–30 minutes, flipping halfway.
Whisk tahini, garlic, olive oil, balsamic vinegar, and salt; thin with water.
Top roasted fries with black beans, avocado, red onion, and parsley.
Drizzle with sauce and serve immediately.
