Ingredients
  

  • 500 g 1.1 lb starchy pumpkin, cut into sticks
  • 1 tbsp olive oil
  • ½ tsp salt pepper, and paprika each
  • 1 cup cooked black beans
  • ½ avocado sliced
  • ½ red onion thinly sliced
  • Fresh parsley chopped

Tahini Sauce:

  • 2 tbsp tahini
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • ¼ tsp salt
  • Water to thin

Instructions
 

  • Preheat oven to 200°C (400°F).
  • Toss pumpkin with oil, salt, pepper, and paprika. Roast 25–30 minutes, flipping halfway.
  • Whisk tahini, garlic, olive oil, balsamic vinegar, and salt; thin with water.
  • Top roasted fries with black beans, avocado, red onion, and parsley.
  • Drizzle with sauce and serve immediately.
