Loaded veggie sandwich is not only packed with flavors, but it's also full of nutrients from a variety of fresh vegetables.

- 1 loaf of ciabatta bread
- 4 tbsp vegan cream cheese substitute for hummus or any other spread
Sandwich filling
- Sliced juicy tomato
- Roasted zucchini slices
- Roasted bell pepper
- Roasted potato slices
- pickle slices
- Shredded red cabbage
- Fresh basil leaves
Roast hte zucchini, potatoes and bell pepper in the oven for about 25 minutes.
Slice the ciabbata in half. Spread the vegan cream cheese or spread of choice to both slices.
Start layering the vegetables. Layer zucchini, bell pepper, tomato, potato, basil leaves and shredded cabbage.
Slice the sandwich in half or quarters and enjoy!
