Loaded veggie sandwich is not only packed with flavors, but it's also full of nutrients from a variety of fresh vegetables.

Ingredients
  

  • 1 loaf of ciabatta bread
  • 4 tbsp vegan cream cheese substitute for hummus or any other spread

Sandwich filling

  • Sliced juicy tomato
  • Roasted zucchini slices
  • Roasted bell pepper
  • Roasted potato slices
  • pickle slices
  • Shredded red cabbage
  • Fresh basil leaves

Instructions
 

  • Roast hte zucchini, potatoes and bell pepper in the oven for about 25 minutes.
  • Slice the ciabbata in half. Spread the vegan cream cheese or spread of choice to both slices.
  • Start layering the vegetables. Layer zucchini, bell pepper, tomato, potato, basil leaves and shredded cabbage.
  • Slice the sandwich in half or quarters and enjoy!
