Ingredients
  

  • 1 large eggplant
  • 1 tsp miso paste
  • 2 cloves garlic minced
  • 1 tbsp soy sauce
  • 1 tsp maple syrup
  • tsp sriracha
  • 1 tsp sesame oil
  • 1 tbsp sesame seeds
  • 1 spring onion

Instructions
 

  • Cut the eggplants in half lengthwise. If using larger eggplants, cut them into 1- to 2-inch thick rounds. Score the flesh in a crisscross pattern, being careful not to cut through the skin. This helps the glaze soak in and the eggplant to cook evenly.
  • In a small bowl, combine the miso paste, garlic, sriracha, soy sauce, maple syrup and sesame oil. Stir until smooth.
  • Brush the miso glaze generously over the scored surface of each eggplant and sprinkle sesame seeds on top. Place the eggplant in the air-fryer or oven with 180C and bake until tender. Watch carefully so it doesn’t burn.
  • Garnish with sprinkle of green onions. Serve it and enjoy!
