- 1 large eggplant
- 1 tsp miso paste
- 2 cloves garlic minced
- 1 tbsp soy sauce
- 1 tsp maple syrup
- tsp sriracha
- 1 tsp sesame oil
- 1 tbsp sesame seeds
- 1 spring onion
Cut the eggplants in half lengthwise. If using larger eggplants, cut them into 1- to 2-inch thick rounds. Score the flesh in a crisscross pattern, being careful not to cut through the skin. This helps the glaze soak in and the eggplant to cook evenly.
In a small bowl, combine the miso paste, garlic, sriracha, soy sauce, maple syrup and sesame oil. Stir until smooth.
Brush the miso glaze generously over the scored surface of each eggplant and sprinkle sesame seeds on top. Place the eggplant in the air-fryer or oven with 180C and bake until tender. Watch carefully so it doesn’t burn.
Garnish with sprinkle of green onions. Serve it and enjoy!
