- 3-4 medium onions, thinly sliced
- ½ tsp salt
- 1 tsp sugar
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
- 200 g tofu
- ⅓ tsp black pepper
- ½ tsp thyme
- 2 tbsp vegan soy cream or yogurt
- parsley to garnish
Heat olive oil in a pan over medium heat. Add the sliced onions and sauté until golden brown and soft—this should take about 10-15 minutes.
Crumble the tofu into the pan with the onions. Stir well and cook for another 5-7 minutes. Add balsamic vinegar, herbs, vegan cream and season with salt and pepper. The tofu will absorb the flavors, creating a rich and savory filling. Remove from heat and let the mixture cool.
Preheat your oven to 200°C (400°F). Roll out your puff pastry on a lightly floured surface and cut it into equal-sized squares. Place a spoonful of the filling in the center of each square, leaving enough room around the edges to seal the pastry.
Fold each pastries edges like a tart. Bake the pastries in the preheated oven for 15-20 minutes, or until golden and puffed. Let them cool slightly before serving.
