Ingredients
  

  • 2-3 large onions chopped
  • 2 tbsp olive oil
  • ½ tsp salt
  • 3 tbsp vegan Greek style yogurt
  • ½ cup chopped spring onion
  • 1 clove garlic minced
  • ½ tsp black pepper

Instructions
 

  • Heat olive oil in a pan and sauté onions with salt over medium heat. Cook slowly until golden brown and caramelized (15–20 minutes).
  • Remove onions from heat and let them cool completely.
  • In a bowl, mix the cooled onions with vegan Greek yogurt, garlic, spring onion, and black pepper. Chill in the fridge for 30 minutes for best flavor.
  • Serve with chips, nachos, fresh veggies, or warm bread.
