- 2-3 large onions chopped
- 2 tbsp olive oil
- ½ tsp salt
- 3 tbsp vegan Greek style yogurt
- ½ cup chopped spring onion
- 1 clove garlic minced
- ½ tsp black pepper
Heat olive oil in a pan and sauté onions with salt over medium heat. Cook slowly until golden brown and caramelized (15–20 minutes).
Remove onions from heat and let them cool completely.
In a bowl, mix the cooled onions with vegan Greek yogurt, garlic, spring onion, and black pepper. Chill in the fridge for 30 minutes for best flavor.
Serve with chips, nachos, fresh veggies, or warm bread.
