large onion

garlic

olive oil

tomato paste

chopped tomatoes

cup
pearl couscous
3/4
cup
water

tsp
salt

tsp
smoked paprika
½
tsp
black pepper

handful
fresh parsley
lemon juice to serve
Instructions
Chop the onion and saute with olive oil for about 5 minutes.
Add minced garlic and chikpeas together with all the spices. Saute for another 5 minutes.
Add tomato paste, chopped tomatoes, couscous and water and simmer for 10 minutes until water is absorbed.
Serve with fresh parsley and a squeze of lemon juice. Enjoy!
