Ingredients
  

  • 1 can chickpeas
  • 1 large onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 can chopped tomatoes
  • 1/2 cup pearl couscous
  • 3/4 cup water
  • 1 tsp salt
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • 1 handful fresh parsley
  • lemon juice to serve

Instructions
 

  • Chop the onion and saute with olive oil for about 5 minutes.
  • Add minced garlic and chikpeas together with all the spices. Saute for another 5 minutes.
  • Add tomato paste, chopped tomatoes, couscous and water and simmer for 10 minutes until water is absorbed.
  • Serve with fresh parsley and a squeze of lemon juice. Enjoy!
