Ingredients
  

For the onions:

  • 3 medium red onions thinly sliced

For the marinade:

  • 1/2 cup white vinegar
  • 1/2 cup water
  • 3 –4 whole peppercorns
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon sumac

Instructions
 

  • Peel and thinly slice the red onions using a mandoline or sharp knife.
  • In a bowl or measuring jug, mix the vinegar, water, peppercorns, salt, sugar, and sumac until dissolved.
  • Place the sliced onions in a clean jar or bowl and pour the marinade over them, ensuring they are fully submerged.
  • Let sit for at least 1 hour before serving. For best flavor, allow to sit for 2–4 hours or overnight.
