Quinoa, Beetroot, and Mushroom Salad! This salad is not only packed with flavor, but it's also loaded with essential vitamins and minerals that your body needs to thrive.

Ingredients
  

  • 1 cup dry quinoa
  • 2 large beetroot
  • 1 cup mushrooms
  • 1 onion chopped
  • cup fresh parsley chopped
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and Pepper to taste

Instructions
 

  • Cook quinoa according to package instructions.
  • Roast cubed beetroot with 1 tbsp of olive oil and salt in the oven at 200C for 40 minutes, until tender. Halfway add sliced mushrooms.
  • In a large bowl, combine cooked quinoa, roasted beetroot, mushrooms, onion and chopped parsley.
  • In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  • Pour dressing over the salad and toss to combine. Serve it and Enjoy!
