Quinoa, Beetroot, and Mushroom Salad! This salad is not only packed with flavor, but it's also loaded with essential vitamins and minerals that your body needs to thrive.

- 1 cup dry quinoa
- 2 large beetroot
- 1 cup mushrooms
- 1 onion chopped
- ⅓ cup fresh parsley chopped
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and Pepper to taste
Cook quinoa according to package instructions.
Roast cubed beetroot with 1 tbsp of olive oil and salt in the oven at 200C for 40 minutes, until tender. Halfway add sliced mushrooms.
In a large bowl, combine cooked quinoa, roasted beetroot, mushrooms, onion and chopped parsley.
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
Pour dressing over the salad and toss to combine. Serve it and Enjoy!
