Roasted cabbage salad

This roasted cabbage salad is hearty, full of flavour and dressed with my favourite delicious mustard vinaigrette.

Ingredients
  

  • ¼ large cabbage
  • 1 can chickpeas
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 bunch parsley
  • 1 apple
  • ½ cup toasted peanuts

Dressing

  • 3 tsp mustard
  • 1 tbsp agave
  • 1 lemon juice
  • 2 tbsp olive oil
  • ½ tsp black pepper

Instructions
 

  • Slice the cabage into bite size pieces and transfer to a baking tray.
  • Add chickpeas, drizzle olive oil, salt and black pepper. Mix well and bake in the 200C oven for about 20 minutes.
  • Meanwhile mix all the dressing ingredients and chop the remaining vegetables.
  • Add roasted cabbage to a serving bowl together with the rest of the ingredients and mix well. Serve it and enjoy!
