Ingredients
  

  • 1 kg (2.2 lb) carrots cut into sticks
  • 2 tsp dijon mustard
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tbsp balsamic vinegar
  • ½ tsp ground cumin
  • ½ tsp salt

Garnish

  • cup toasted pine nuts
  • 1 handful chopped fresh parsley
  • 1 tbsp vegan feta cheese crumbled

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a small bowl whisk Dijon, olive oil, maple syrup, balsamic vinegar, cumin, and salt.
  • Toss carrots with the glaze and spread on a baking tray.
  • Roast for 25–30 minutes, flipping halfway, until golden and tender.
  • Top with toasted pine nuts, parsley, and vegan feta. Serve warm.
