- 1 kg (2.2 lb) carrots cut into sticks
- 2 tsp dijon mustard
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 1 tbsp balsamic vinegar
- ½ tsp ground cumin
- ½ tsp salt
Garnish
- ⅓ cup toasted pine nuts
- 1 handful chopped fresh parsley
- 1 tbsp vegan feta cheese crumbled
Preheat oven to 400°F (200°C).
In a small bowl whisk Dijon, olive oil, maple syrup, balsamic vinegar, cumin, and salt.
Toss carrots with the glaze and spread on a baking tray.
Roast for 25–30 minutes, flipping halfway, until golden and tender.
Top with toasted pine nuts, parsley, and vegan feta. Serve warm.
