Ingredients
  

  • 2-3 medium pa choi
  • 2 tbsp vegetable oil
  • 3 cloves garlic
  • 2 tbsp soy sauce
  • 1 tsp sugar
  • salt to taste
  • 1 tbsp sesame seeds

Instructions
 

  • Start by thoroughly rinsing the pak choi to remove any dirt or grit, especially between the stalks. Slice it lengthwise into halves or quarters depending on the size of the vegetable.
  • Heat the vegetable oil (or sesame oil, if you prefer) in a large skillet or wok over medium-high heat. Once the oil is hot, you’ll be ready to infuse it with garlic flavor.
  • Add the minced garlic to the hot oil and sauté for about 30 seconds to 1 minute. Keep stirring to ensure the garlic doesn’t burn. You want it to turn fragrant and golden, but not brown.
  • Now, add the pak choi to the skillet. Stir-fry for 3-5 minutes, allowing the stalks to soften slightly while the leaves wilt down. The contrast of the tender leaves and crunchy stalks is what makes pak choi so enjoyable in this dish.
  • Pour in the soy sauce and sugar and toss the pak choi to coat it evenly. Let it cook for another minute or so, absorbing all the savory goodness. If desired, season with a pinch of salt, but keep in mind that the soy sauce is naturally salty.
  • Remove the pan from heat and transfer the sautéed pak choi to a serving dish. If you want a little extra flair, sprinkle some sesame seeds on top. Serve immediately as a side dish, or over a bed of rice for a light meal.
