- 1 head cauliflower cut in florets
- 1 tbsp miso paste
- 1 tbsp gochujang
- 2 tsp soy sauce use tamari for gluten-free option
- 1 tbsp maple syrup
- 2 cloves garlic minced
- 2 tbsp sesame oil
- 1 tbsp sesame seeds
- green onions to garnish
Set your oven to 220°C. Line a baking sheet with parchment paper or lightly grease it.
In a small bowl, whisk together the miso paste, gochujang, soy sauce, garlic, sesame oil and maple syrup until you have a smooth, pourable sauce. The combination of miso and gochujang gives the dish its signature punch of flavor.
In a large bowl, toss the cauliflower florets with the sauce, making sure each piece is evenly coated. The sauce should stick well, coating the nooks and crannies of each floret. Sprinkle sesame seeds on top o the florets.
Spread the coated cauliflower evenly on the prepared baking sheet. Bake for 25-30 minutes. The cauliflower should become crispy and slightly caramelized, with some charred edges for extra flavor.
Once out of the oven, sprinkle the roasted cauliflower with freshly sliced green onions. Serve immediately while it’s hot and crispy.
