Ingredients

  • 900g (2lb) small or baby potatoes

Spicy sauce

  • 2 tbsp olive oil
  • 1 tsp red pepper paste or gochujang
  • 1 tsp maple syrup
  • ½ tsp smoked paprika
  • ½ tsp salt
  • tsp chili flakes

Garnish

  • 1 tbsp fresh chopped parsley
  • squeeze of lemon juice

Instructions

  • Start by boiling the potatoes in salted water until they’re fork-tender. This usually takes about 15–20 minutes. Drain and let them cool slightly.
  • While the potatoes cool, preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with oil to prevent sticking.
  • Mix all the sauce ingredients in a small bowl. Coat boiled potatoes in the sauce and transfer to the baking sheet. Using a fork or the bottom of a sturdy glass, gently smash each potato until it’s about 1/2 inch (1,5cm) thick. Brush the remaining sauce on the potatoes.
  • Bake the potatoes in the preheated oven for 20–25 minutes or until they’re crispy and golden brown on the edges.
  • Remove the potatoes from the oven and sprinkle them with fresh parsley. If you like squeeze some lemon juice on top of the potatoes for fresh kick. Serve warm and enjoy!
