- 2 medium white onions
- 1 large tomato
- 1 ½ tbsp sumac
- 2 tbsp finely chopped parsley
- 1 tbsp olive oil
- ½ tsp salt
- juice of ½ lemon
- a pinch of chili flakes for some heat optional
Begin by thinly slicing your onions. If raw onions tend to be too sharp for your liking, you can massage onions before adding other ingredients with salt and let it sit for 5 minutes.. This helps mellow out the flavor, making the onions more palatable while still retaining their crunch.
In a large bowl, combine the sliced onions with sumac, olive oil, lemon juice, and fresh parsley. The sumac will instantly coat the onions in a beautiful reddish hue, while the lemon and olive oil will add a silky brightness.
