Sunflower Seed "Tuna"

This Sunflower seed "tuna" is my new favourite fish substitutes. Very easy to make and it is also raw and super healty.
Prep Time 20 minutes mins
- 100 g sunflower seeds soaked
- 1 handflul chopped parsley, dill and scallions
- 2 tsp vegan mayonnaise
- 1 tsp mustard
- ½ lemon juice
- 1 tsp capers
- ½ black pepper
- ½ salt
Soak the sunflower seeds in cold water overnight or at least 5-6 hours.
Drain then and process in the food processor pulsing until it breaks into smaller pieces.
Add the rest of the ingredients and mix very well.
Serve it in a lettuce with some cucumber and carrot. Roll like a wrap.You can also serve it with bread or tortilla, enjoy!
