A simple roasted cherry tomato dish with garlic, olive oil, and balsamic vinegar. Bursting with Mediterranean flavors, it’s perfect as a side, pasta topping, or spread for crusty bread.

- 500 g (1.1lb) cherry tomatoes
- 1 bulb garlic peeled and cloves separated
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 handful fresh parsley chopped
- salt and black pepper, to taste
Preheat oven to 180°C (350°F).
Place cherry tomatoes, parsley and garlic cloves in an oven-safe dish.
Drizzle with olive oil and balsamic vinegar. Season with salt and pepper. Mix well.
Roast for 30–35 minutes, until tomatoes are soft and slightly caramelized.
