A simple roasted cherry tomato dish with garlic, olive oil, and balsamic vinegar. Bursting with Mediterranean flavors, it’s perfect as a side, pasta topping, or spread for crusty bread.

Ingredients
  

  • 500 g (1.1lb) cherry tomatoes
  • 1 bulb garlic peeled and cloves separated
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 handful fresh parsley chopped
  • salt and black pepper, to taste

Instructions
 

  • Preheat oven to 180°C (350°F).
  • Place cherry tomatoes, parsley and garlic cloves in an oven-safe dish.
  • Drizzle with olive oil and balsamic vinegar. Season with salt and pepper. Mix well.
  • Roast for 30–35 minutes, until tomatoes are soft and slightly caramelized.
  • Serve it and enjoy!
