- 500 g ripe tomatoes
- 1 medium onion chopped
- 2 cloves garlic minced
- ⅓ cup fresh herbs (parsley and dill)
- 150 g flour
- 1 tsp baking powder
- 1 tbsp olive oil
- ½ tsp black pepper
- ½ tsp dried italian herbs
- ½ tsp salt
- lemon wedges to serve
- 3 tbsp vegetable oil to fry
Begin by chopping your ripe tomatoes. Combine the tomatoes with finely chopped onion, minced garlic, and your favorite fresh herbs.
Add in the flour, olive oil, spices and baking powder. Slowly fold this dry mixture into your tomato blend, making sure everything is evenly incorporated. If it seems too loose, you can add a touch more flour until it reaches a thick, scoopable consistency.
Heat up some vegetable oil in a skillet over medium heat. Once it’s hot, carefully spoon small portions of the tomato batter into the pan, gently flattening them with the back of your spoon or a spatula. Fry each fritter for about 2-3 minutes on each side, or until they're golden brown and crispy. The key here is to not overcrowd the pan, so the fritters cook evenly.
Once they’re perfectly crisp, remove the fritters and place them on a plate lined with paper towels to drain any excess oil. You’ll notice how beautifully golden and crispy they look! Serve them hot with a squeeze of lemon juice and a side of your favorite sauce for dipping.
