- 400 g (0.9 lb) vegan puff pastry cut into squares
- 2-3 tbsp vegan basil pesto
- 2 large tomatoes cut into thick rounds
- salt, to taste
- dried oregano, to taste
Preheat oven to 200°C (390°F).
Roll out puff pastry and cut into squares. Place squares on a lined baking tray.
Brush each square with pesto. Top with a slice of tomato. Sprinkle with salt and oregano.
Bake for 20–25 minutes until puffed and golden. Serve warm or cooled.
