Ingredients
  

  • 400 g (0.9 lb) vegan puff pastry cut into squares
  • 2-3 tbsp vegan basil pesto
  • 2 large tomatoes cut into thick rounds
  • salt, to taste
  • dried oregano, to taste

Instructions
 

  • Preheat oven to 200°C (390°F).
  • Roll out puff pastry and cut into squares. Place squares on a lined baking tray.
  • Brush each square with pesto. Top with a slice of tomato. Sprinkle with salt and oregano.
  • Bake for 20–25 minutes until puffed and golden. Serve warm or cooled.
