Roasted Curried Cauliflower

This Roasted Curried Cauliflower is easy to make, packed with flavor, and sure to bring life to grain bowls, salads, and more.

- 1 head cauliflower
- 2 tbsp olive oil
- 1 tsp curry powder
- 1 tsp salt
- 1 tsp dried herbs
Sauce
- 2 tbsp vegan mayonaise
- 1 tbsp whole grain mustard
- ½ lemon juice
- ½ tsp curry powder
- ½ tsp paprika
Cut the cauliflower into florets and add to a baking sheet.
Drizzle with oil, curry, salt and herbs and mix evenly. Bake in the preheated 200C oven for about 30 minutes.
Maanwhile mix all the sauce ingredients and transfer to a small bowl.
Serve the roasted cauliflower with sauce and enjoy!
