Tips and Variations
- Potato and starch: I have a great tip for measuring how much starch you will need for the recipe When you mash the potatoes gently form a flat top and divide it in four parts. Remove one part of the mashed potatoes and add starch to fill up the hole. We need to use a quarter part of starch of your potatoes. For example for 500g potatoes you will need 125g starch.
- Baking Option: I personally air fried these potato balls and they came out super crispy, but if you don’t have air frier you can use oven, you can bake the potato balls at 400°F (200°C) for about 15–20 minutes or until they’re golden and crispy.
- Add Some Spice: If you like a bit of heat, add a pinch of cayenne pepper or a dash of hot sauce to the potato mixture.
- Make It Cheesy: Mix in your favorite vegan cheese for an extra gooey surprise in the center!
Serving Suggestions

Potato Balls with Tzatziki
Ingredients
- 500 g potatoes peeled and cubed
- 125 g potato or corn starch
- ½ tsp salt
- ½ tsp paprika
- ½ tsp mixed dried herbs
- ½ tsp black pepper
- 3 tsp olive oil
Tzatziki
- 2 tbsp vegan greek yogurt
- ½ english cucumber grated
- 1 clove minced garlic
- 1 handful chopped chives
- ½ of one lemon juice
- salt to taste
Instructions
- Start by boiling the potatoes until they’re fork-tender. Drain, then mash them in a large mixing bowl until smooth.
- To the mashed potatoes, add starch, 1 tbsp olive oil and spices. Mix and knead everything together until well combined.
- Take a small amount of the mixture and roll it into a ball (about the size of a golf ball). Repeat until you’ve used up all the potato mixture.
- Place the ball in to the air fryer or on the baking sheet and brush with the remaining olive oil. Air fry or bake at 200C for about 18-20 minutes until golden brown and crispy.
- In the meantime make the tzatziki. Combine the yogurt, grated cucumber (make sure to squeeze out the excess water), minced garlic, lemon juice, salt and fresh chives. Stir until smooth and combined.
- Serve the potato balls with the tzatziki on the side and enjoy!
