This fresh radish salad is one of the easiest and most delicious salads you could eat in spring time. I guess the only vegetable that reminds me of spring is radish. My mother was always growing it and it is one of the first fresh vegetables we could eat after a long winter time. So you feel so happy that the spring and fresh produce from the garden is coming.
This salad is very very easy to make and it is made from just a couple of ingredients. I like to keep it plain and simple as it is so delicious in this way. It also goes well with lots of meals as a side dish but I also like to eat it on it’s own as it is very healthy for you.
Ingredients for Fresh Radish salad
Radish. Of course. It is the star of the salad. Use fresh crunchy radish here. You’ll have to cut them very thinly and it takes a little time, but I promise you the result is well worth the time!
Parsley. My favourite herb. As I said so many times before, it’s an absolute must to everything I eat. It just gives a super lovely flavour to the salad. And greens are always good in salads.
Dill. I am from a country where dill is the main herb in all the dishes. And I love it! With radishes dill is super yummy and gives this unique flavour.
Olive oil. You’ll need good quality olive oil here. The dressing is very simple for this salad and if the olive oil is not good it can ruin the taste of the salad.
Lemon juice. Of course my favourite add to the salad is always lemon. I like the sourness of the juice and it also makes a lovely marinade for the radishes.
Salt and Black Pepper. These are very simple and good old classic mixes of spices that go so well together with no exception here with radishes.

Fresh Radish Salad
Ingredients
- 300 g fresh radishes
- 1 handful fresh parsley
- 1 handful fresh dill
- 2 tbsp olive oil
- ½ lemon juice
- ½ tsp salt
- ½ tsp black pepper
Instructions
- Wash and slice radishes into thin circles.
- Transfer to a bowl and add chopped herbs, olive oil, lemon juice and spices.
- Mix well and let it sit for 5 minutes.
- Serve with the marinade and more olive oil. Enjoy!
