These stuffed hummus and spinach puff pastry are going to be your new favourite and easy snack idea! It’s packed with many different flavours and actually very easy to make. Puff pastry is one of those delicious things when you stuff with whatever you like it’s going to turn out perfectly!

Puff Pastry is very popular in my country, it is available in the refrigerator section or in the freezer section of every grocery store. Definitely the most popular is the refrigerator version. I always have one package of puff pastry in my freezer for quick and easy baking.

These stuffed puff pastry bites are perfect for any occasion, quick lunch, great for meal prep or snacking and the most importantly everyone is going to love these especially kids!

How to make Stuffed Puff Pastry Pockets

  • Roll out the rectangular sheet of pastry and gently roll a couple of times with a rolling pin to smooth it out.
  • Cut it lengthwise down the middle, then cut into three even parts. There will be 6 small rectangles.
  • The top part of every rectangle, place a teaspoon of hummus, then some chopped sun-dried tomatoes, cooked spinach and a little bit of vegan cheese. You can change up some ingredients or use whatever you have on hand, but this combination was really really good together.
  • Fold the bottom half over the top, seal shut with your fingers.
  • Place the envelopes on a parchment paper lined cookie sheet.
  • I like to brush a bit of olive oil on top, then sprinkle some sesame seeds and more vegan cheese!
  • Bake in the oven for about 30 minutes, until golden brown and crispy.

Ingredients
  

  • 1 pack puff pastry sheets
  • 1 bowl homemade hummus
  • 10 sun dried tomatoes
  • 100 g sauted spinach
  • 30 g vegan cheese
  • olive oil, sesame seeds to top
