Try this beautiful green lentil and olive lettuce cups which are unique and boosted with many herbs flavours. This meal is perfect for meal prep to make ahead, or just refreshing summer lunch. I love how simple it is to make and how light it is for the hot summer days.
I’ve been growing many herbs and lettuce lately, so I always have to think new and original ways to eat them. I actually add my herbs to all the dishes and especially this salad is so so good! You can make this salad and eat on its own but I highly recomend to make lettuce cups. It looks really good when serving and kids are going to love it!
The ingredients for Lentil Olive Lettuce Cups
There is very few ingredients in this salad but everything goes so well together and slightly fulfills all the flavours you want with your salad.
- Green Lentils. I have a big thing for lentils and I always try to have them at home. It’s so good in salads, extra protein, stews, soups and so on. I like to cook dry ones, but you can definitely use the canned ones.
- Green olives. Another star of the salad. I love to have good quality and delicious olives at home. Try to find the ones that are not bitter. Pitted olives will work just as great. You can also swap to kalamata olives if you prefer the taste.
- Herbs. I love the combination of green onion, parsley and mint here. Mint here in my opinion is a must as it gives this freshness. Also my love for parsley is never ending. If you want to experiment with herbs feel free to. Although this combination was jus perfect for me.
- Dressing. I make the simple olive oil, lemon, salt and pepper dressing. You can also add some sumac or za’atar if you want to spice it up. Also add chili if you like and want spicier salad.
- Cups. Use any lettuce that can hold in shape. I used swiss chard as I growed so much this year. You can also use romaine lettuce or gem lettuce here.

Lentil Olive Lettuce Cups
Ingredients
- 200 g dry green lentils
- 1 cup green olives
- 1 handful green onions chopped
- 1 handful mint chopped
- 1 handful parsley chopped
- lettuce cups
- 1 tbsp sesame seeds
Dressing
- 2 tbsp olive oil
- 1 lemon juice
- ½ tsp salt
- ½ tsp black pepper
Instructions
- In the pot add the dry lentils and cover it with boiling water. Boil for about 25 minutes until tender. Drain and cool down.
- To a bowl add green lentils, chopped green olives, herbs and dressing ingredients.
- Mix well and add a tablespoon of the mixture to each lettuce cup.
- Garnish with sesame seeds and enjoy!
