Roasted Cauliflower with Green Tahini Sauce
For the Roasted Cauliflower
The roasting process transforms cauliflower into something magical. High heat caramelizes the edges, giving you crispy bites with tender, slightly nutty centers.
For the Green Tahini Sauce
Let’s talk about this sauce—it’s a showstopper. Fresh parsley , sunflower seeds, lemon, and creamy tahini come together to create a drizzle that’s good enough to eat by the spoonful. It’s vibrant, tangy, and oh-so-creamy without a drop of dairy.
Tips for Perfect Results
- Don’t Overcrowd the Pan: To achieve crispy, golden cauliflower, ensure the florets have space to breathe on the baking sheet. Overcrowding leads to steaming, not roasting.
- Customizable Sauce: No parsley? Swap it for cilantro, basil, or even mint. The base is versatile, so get creative!
- Prep Ahead: The tahini sauce can be made a day in advance. In fact, the flavors deepen as it sits.
Why Tahini?
Tahini, a paste made from sesame seeds, is a staple in Middle Eastern and Mediterranean cooking. It’s rich, nutty, and loaded with healthy fats and minerals like calcium and magnesium. Combined with fresh herbs and lemon, it becomes a creamy, luscious sauce that complements the roasted cauliflower beautifully.
