Ingredients
  

  • 1 head head of cauliflower, cut into florets
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 cup steamed green beans
  • cup pomegranate seeds, for topping optional
  • cup chopped parsley, for topping

Dressing

  • cup sunflower seeds
  • 2 tbsp tahini
  • 2 cloves garlic
  • ½ of one lemon juice
  • ½ cup water
  • salt to taste
  • 1 small bunch parsley

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup. Toss the cauliflower florets with olive oil, paprika, black pepper and salt, until well coated. Spread the florets evenly on the prepared baking sheet. Roast for 25–30 minutes, until the edges are golden and crispy.
  • In a blender or food processor, combine tahini, garlic, parsley, lemon juice, sunflower seeds, and a pinch of salt. Blend until smooth. Gradually add water, a tablespoon at a time, until the sauce reaches a creamy, pourable consistency. Taste and adjust seasoning with more lemon juice or salt as needed.
  • Drizzle the tahini sauce on the serving plate. ransfer the roasted cauliflower over the sauce. Add green beans on top. Drizzle more of the green tahini sauce.
