Ingredients
  

  • 1 cup fine bulgur wheat
  • cup hot water
  • 3-4 large potatoes
  • 1 large onion
  • 2 tbsp tomato paste
  • 1 tsp turkish spicy red pepper paste
  • 1 lemon juice
  • 3 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili flakes
  • salt to taste
  • cup fresh parsley chopped
  • cup fresh green onion chopped
  • lettuce and lemon wedges to serve

Instructions
 

  • In a large bowl or a baking tray, place 1 cup of fine bulgur, then pour in hot water and mix. Cover and let it rest for about 10 minutes to soften.
  • While waiting saute the onionin olive oil with tomato paste and red pepper paste.
  • Boil the potatoes with the skin on until tender. Peel and mash the potatoes in a separate bowl.
  • To the soften bulgur wheat add the onion mixtue, mashed potatoes, herbs, lemon juice, cumin, chili flakes and salt. Mix everything with your hands until nice dough like consistency. Taste and add more spicies or lemon juice to your liking.
  • With your hands, shape the mixture into small oval or round patties. and place on lettuce cups for serving. When serving squeeze lemon wedge on top of kofte and enjoy!
