Ingredients
- 900g (2lb) small or baby potatoes
Spicy sauce
- 2 tbsp olive oil
- 1 tsp red pepper paste or gochujang
- 1 tsp maple syrup
- ½ tsp smoked paprika
- ½ tsp salt
- ⅓ tsp chili flakes
Garnish
- 1 tbsp fresh chopped parsley
- squeeze of lemon juice
Instructions
- Start by boiling the potatoes in salted water until they’re fork-tender. This usually takes about 15–20 minutes. Drain and let them cool slightly.
- While the potatoes cool, preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with oil to prevent sticking.
- Mix all the sauce ingredients in a small bowl. Coat boiled potatoes in the sauce and transfer to the baking sheet. Using a fork or the bottom of a sturdy glass, gently smash each potato until it’s about 1/2 inch (1,5cm) thick. Brush the remaining sauce on the potatoes.
