Easy Orzo and Pea Soup
Ingredients
- 2 tbsp olive oil
- 1 medium onion
- 1 medium carrot
- 1 large potato
- 1 cup orzo pasta
- 1 cup frozen peas
- 1 tsp salt
- ½ tsp turmeric
- ½ tsp black pepper
- 2 l water or vegetable broth
Herb sauce
- 2-3 cloves garlic minced
- 1 tsp dried mint
- 2 tsp fresh or dried dill
- 1 whole lemon juice
Instructions
- Start by chopping carrot, onion and potato into fine cubes.
- In a large pot, heat the olive oil over medium heat. Add the onion and carrot. Season with salt black pepepr and turmeric. Sauté for about 5 minutes, stirring occasionally, until the vegetables are soft and fragrant.
- Pour in the broth and water, then bring the mixture to a boil. Stir in the orzo pasta and chopped potatoes. Reduce the heat to a simmer and cook for 7-8 minutes, stirring occasionally to prevent the orzo from sticking.
- Meanwhile make the herb sauce. In a small bowl combine minced garlic, dried mint, dill and lemon juice.
- When the potatoes and orzo are almost cooked stir in the sauce and frozen peas. Cook for an additional 2-3 minutes, or until the peas are heated through.
