These potato wedges with pesto mayonnaise is a perfect snack or a side dish to any lunch or dinner. It’s so full of flavours and this sauce is to die for. These wedges are soft on the inside and crispy on the outside.
Homemade wedges are so much better that store bought. Also it’s so much healthier for you as well. Here is how to make them.
How to make potato wedges?
Cutting potato wedges is so much easier than cutting fries. Cut a potato in half. Halve potato, then halve EACH HALF again, so you have 4 pieces. That’s it! So easy, right?
Next step is to season them and mix. I seasoned mine with salt, pepper and mixed italian herbs. You can get creative here and choose other spices like paprika or garlic. There’s so many variations here.
Tost everything in olive oil and mix very well.
Now transfer them to a baking sheet. I like to put them skinny side up so they get really crunchy on the outside and soft on the inside.
Last step is to bake and wait for the wedges! I think it’s my favorite part to wait and smell these delicious wedges. Bake in the oven for 35-40 minutes and check them occasionally.
How to make Pesto Mayonnaise?
While your potatoes are cooking I like to make a dipping sauce for them. This time I chose to make pesto mayo, and it was insanelly good! These Potato wedges with pesto mayonnaıse goes so well together! I just love how sımple this sauce is and adds so many flavour!
Here you can get creative as well. Use any pesto you love from the shop or make it on your own! I’ve used here homemade zero waste pesto which I made from basil and parsley stemps, together with some pine nuts and garlic. Just throw everything in a food processor and you have beautiful pesto sauce!
Just mix equal parts of mayonnaise and pesto and mix well. Very simple as well!
This sauce would go well with my OVEN ROASTED SMASHED POTATOES.

Potato Wedges with Pesto Mayonnaise
- 1,5 kg large potatoes
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp italian herbs
- 2 tbsp vegan mayonnaise
- 2 tbsp pesto of choice
- Peel and cut each potato into 6-8 wedges.
- Toss potatoes in olive oil and spices and mix well.
- Bake in the preheated oven for about 35-40 minutes until crispy on the outside.
- Mix equal parts of vegan mayonnaise and pesto sauce.
- Dip your potato wedges and enjoy!
