Romesco sauce is a Spanish roasted red pepper sauce, that originated in the Catalan region. It’s used as a sauce, dip, or spread to add flavor to a variety of dishes. There are several variations and no one specific way to make romesco sauce. Ingredients you will almost always find in any romesco sauce are: roasted red peppers, garlic, paprika, nuts and vinegar.

How to make Romesco Sauce?
Blend it!
In a food processor add all the ingredients and blend until you get creamy and smooth consistency! If you like you can also leave it a bit thicker or blend it extra smooth if you prefer this consistency. For the best results you have to taste it before serving! Adjust spices and salt!
Tips for the Best Romesco sauce
- I recommend to use high quality ingretients.
- Start with less seasonings and adjust in the making.
- Roast your own red peppers. If you have the time, you can absolutely roast your own red peppers. You can roast them in the oven or cook on the stove gas until it’s brown and then peel the skin. Also for the best result I would recommend to grill them and peel the skin.
How long can you store Romesco sauce?
Store Romesco dipping sauce in the frindge for up to 5-6 days in the airtight container.
This recipe makes enough that you’ll likely get several uses out of it, which is great. Leftover sauce is perfect for a healthy snack the next day or you can even add it to your breakfast or a sandwich for lunch.

Romesco dipping sauce
Ingredients
- 2 jared roasted red peppers
- 8-9 sun dried tomatoes
- 1 garlic clove
- 1 handful of almonds
- 2 tbsp parsley
- ½ tsp each salt, smoked paprika, chili flakes and black pepper
- 3 tbsp olive oil
- ½ lemon juice
Instructions
- Add all the ingredients in the bowl of a food processor fitted with a blade. Blend or pulse to your desired consistency
- Taste and adjust seasoning to your liking.
