Oh I love love beetroot. I couldn’t live without it in winter. I love everything about them : taste, calour and their look!
You can make so many recipes with beetroot and cook in so many ways, such as raw, boiled, baked and so on!
I like to get most of the flavour from beets in a dish so I made this beautiful simple spread which is so perfect with rye bread and parsley on top!
Beetroot contains so many good nutientrs, vitamins and minerals, also improves heart, and blood health, can be beneficial as anti-cancer vegetable, maıntains healthy liver.
Beetroot and walnut spread
- 2 small beetroot roasted
- 2 cloves garlic
- 1 handful of parsley
- 1 handful of walnuts
- ½ lemon juice
- ½ tsp salt
- ½ tsp cumin
- 2 tbsp olive oil
- I a food processor add beetroot, garlic, parsley, walnuts, spices, lemon juice and olive oil.
- Blend until you get smooth consistency.
- Spread on rye bread, top it with olive oil, parsley and pine nuts.
