Ingredients for the Couscous vegetable wraps:

For the Couscous:

  • 1 cup couscous
  • 1 1/4 cups water or vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sumac and cumin to taste
  • 1 tbsp tomato paste
  • 1/2 of the lemon juice
  • 2 tbsp pomergranate molases
  • chii flakes (optional)

Vegetable Filling:

  • 3 cucumbers, thinly sliced
  • 1 small onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red cabbage, shredded
  • 1/2 cup parsley, choped
  • 1 handful lettuce, thinly sliced
  • 1 tablespoon olive oil

For the Wrap:

  • Whole wheat or your preferred wraps/tortillas

Instructions:

1. Prepare the Couscous:

Begin by preparing the couscous. In a saucepan, bring the water or vegetable broth to a boil. Stir in the couscous, remove from heat, and cover. Let it sit for about 5 minutes or until all the liquid is absorbed. Fluff the couscous with a fork and mix in olive oil, salt, and pepper.

After fluffing the couscous, add tomato paste, lemon juice, pomergranate molases and spices and mix very well.

2. Prepare the Vegetables:

While the couscous is resting, prepare the vegetable filling. Slice all the vegetables very thinly.

Mix the vegetables with coucous mixture.

3. Assemble the Wraps:

Warm the wraps or tortillas according to the package instructions.. Spoon a portion of couscous salad onto each wrap. Squize some lemon juice if desired.

4. Roll the Wraps:

Fold the sides of the wrap inward and then roll it up tightly from one end to the other, enclosing the filling.

5. Serve:

Cut the wraps in half diagonally for easier handling and presentation if desired. Garnish with fresh parsley or cilantro. Serve immediately and savor the delightful combination of flavors and textures in these couscous vegetable wraps.
