These are unlike any other roasted potato I’ve ever had because they’re flavoured all the way through.
Ingredients
Gold potatoes peeled and cut into wedges
Extra virgin olive oil
Garlic, lots of it
Dry oregano, I Love to use flowers for this recipe, but you can use store bought Greek oregano
Sea salt
Lemons, skin and the juice
How to make lemon oregano potatoes
This is one of those simple, beautiful Greek lemon potato recipes with minimal effort and great results. Gold potatoes, extra virgin olive oil, lemons, garlic, and lots of dry oregano create a decadent side dish. Make sure you have enough for seconds. In our house, there are never any leftovers. These decadent roasted lemon potatoes disappear very quickly from the dinner table.
Preheat the oven to 200C.
Peel and cut your potatoes into bite size pieces and boil for about 6 minutes.
Place the potatoes in a large enough baking dish so they dont overlap much. Pour the olive oil all over. Add the garlic, oregano, sea salt and a generous amount of freshly squeezed lemon juice. Mix potatoes with olive oil and seasonings well.
Bake potatoes for 45 min.
Place potatoes on a platter, sprinkle some fresh oregano on top (optional) and serve immediately.

Lemon Oregano Roasted Potatoes
Ingredients
- 1 kg Golden Potatoes
- 3 tbsp olive oil
- 1 lemon zest
- 1 lemon juice
- 3 tst dried oregano
- 4 cloves garlic
Instructions
- Peel and cut potatoes into bite size cubes and boil them for about 6 minutes.
- Drain and let it dry for about 5 minutes.
- Mix all the other ingredients into a sauce.
- Shae the potatoes and pour over the sauce. Mix well and transfer to a baing sheet.
- Cook the potatoes in the preheated 200C oven for about 45 minutes until crisp and brown. Enjoy!
