Roasted Cabbage with creamy Yoghurt Sauce is the perfect healthy snack, appetizer, or side dish for your next meal! Sliced cabbage is brushed with olive oil and seasoning, then roasted until tender.  Warm out of the oven, it is dressed with a scrumptious sauce made with yoghurt and mustard before serving.

WHAT DO I NEED TO MAKE THE ROASTED CABBAGE AND YOGHURT TARTAR SAUCE?

This recipe is very simple to prepare, but packed with flavor! Here is what you will need to make the Roasted Cabbage:

Cabbage

Extra Virgin Olive Oil

Lemon Juice

Black Pepper

Sea Salt

Za’atar

Whole grain mustard

Plain vegan Yoghurt

Garlic

Chili oil

Parsley

HOW TO ROAST THE CABBAGE?

STEP 1: PREHEAT OVEN AND PREPARE THE CABBAGE

Preheat the oven to 200 degrees Celcius. Then, line a baking sheet with parchment paper and set it aside. Next, take half a head of green cabbage and slice it into six wedges. 

STEP 2: DRESS THE CABBAGE 

Whisk together the oil, za’atar, salt and pepper in a small bowl. Place cabbage wedges on the baking sheet lined with parchment paper. Brush the oil mixture onto the cabbage wedges on the front and back using a basting brush. 

STEP 3: ROAST THE CABBAGE

Place the cabbage on center rack in the oven and roast for 40 minutes until tender. Remove from oven and serve warm with Yoghurt Sauce. Sprinkle with more za’atar and drizzle some chili oil, if desired.

Ingredients
  

  • ½ head cabbage
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp za'atar
  • 1 tbsp chili oil
  • 1 tbsp chopped parsley

Yoghurt sauce

  • 2 tbsp vegan yoghurt preferably greek style
  • ½ tbsp whole grain mustard
  • ½ lemon juice
  • 2 cloves garlic
  • 1 tbsp olive oil
  • ½ tsp salt

Instructions
 

  • Cut the cabbage in half and slice the half into 6 wedges.
  • Place on the lined baking sheet. Mix the oil, salt, za''atar and black pepper and brush the wedges evenly on both sides.
  • Bakee in the preheated 200C oven for about 40 minutes until tender and browned.
  • Mix all the sauce ingredients in a separate bowl.
  • On a serving plate add 1 tbsp of yoghurt sauce and spread evenly. Place the cooked cabbage wedges and drizlle more yoghurt sauce. Garnish with fresh parsley, more za'atar and some chili oil (optional) Enjoy!

        It’s a Middle Eastern spice blend, made of savory dried herbs like oregano, thyme, cumin and coriander, with sesame seeds, salt and sumac!

          Is the chili oil part of step number 2 or just step 5?
